Meatless Monday with Vegan Tofu Popcorn Chick’n

Welcome (back) to the Miratel blog and to our weekly vegan recipe share in honour of Meatless Monday. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

Being meat-free does not mean you can’t have the same nibbles that you ate as an omnivore – you can but they are just healthier. Today’s vegan tofu popcorn chick’n recipe is the perfect choice if you are looking for a vegan alternative to a popular comfort food. Aside from being gluten-free, this recipe is simple to make, delicious and will even please meat-eaters. This great recipe (and so many others) comes courtesy of The Vedge.
INGREDIENTS :
  • 350g / 13oz block firm or extra firm tofu
  • ⅓ cup chickpea/garbanzo flour
  • ¼ cup nutritional yeast
  • 1 Tbsp wet mustard (any kind: dijon, wholegrain etc)
  • 1 tsp salt
  • 1 tsp all purpose seasoning (try cajun or lemon pepper for different flavors)
  • ½ tsp pepper
  • ⅓ – ½ cup water
  • 2-3 Tbsp extra virgin olive oil or coconut oil
